Smokey's dried fruit cottage cheese on toasted wholemeal bread

Ingredients for 2 servings:

  • 200 g cottage cheese
  • 100 g dried fruits, mixed (e.g. apples, pears and apricots), diced
  • 1 stalk(s) cinnamon
  • 1 tsp lemon juice
  • 100 ml water
  • 50 g walnuts, chopped
  • 4 slices of bread (wholemeal bread), toasted

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 20 minutes

A healthy breakfast option. Kids will love it, too.

Bring the water to a boil with the cinnamon stick, add the lemon juice, and the diced dried fruit. Bring back to a boil briefly, then remove from the heat and cover. Let the mixture steep overnight (or for at least 4 hours). If there’s any liquid left in the morning, drain it and discard the cinnamon stick. Mix the fruit with the cottage cheese and spread it on the 4 slices of bread. Sprinkle with the nuts.
