Braised cucumbers with minced meat and potatoes

Ingredients for 4 servings:

  • 3 cucumbers
  • 500 g minced meat, mixed
  • 2 large onions
  • 2 garlic cloves
  • 600 g potatoes
  • Vegetable broth (Vegeta), or normal
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash and peel the cucumbers, and cut them in half. Scrape out the cores with a spoon and then dice the cucumbers, but not too finely. Peel and dice the potatoes, as well as the onions. Brown the ground beef and fry the onions. Then add the cucumbers and potatoes. Pour in the broth until everything is well covered. It’s better to use a little more broth to prevent burning. Crush the garlic and season well with salt and pepper. Cook until the potatoes and cucumbers are tender.
