Gnocchi and vegetable stir-fry

Ingredients for 2 servings:

  • 400 g gnocchi
  • some olive oil
  • ½ onion(s)
  • 2 cloves garlic
  • 1 zucchini
  • 1 bell pepper(s), yellow
  • some salt and pepper
  • some paprika powder
  • e.g. turmeric powder
  • e.g. chili powder
  • 200 ml tomato sauce
  • some vegetable broth

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

fast, easy, adaptable

Cook the gnocchi in plenty of salted water for about half the specified cooking time, then drain. Finely chop the onion and garlic and sauté in a little olive oil. Dice the zucchini and bell pepper and add to the pan with the onion and garlic. Sauté everything vigorously and season with plenty of salt, paprika, a little pepper, turmeric if desired, and a dash of chili powder if desired. After about 5 minutes, reduce the heat and add the tomato sauce (ready-made sauce, or chopped tomatoes seasoned with spices, herbs, and tomato paste) and a little stock, depending on the desired consistency. Shortly after, add the drained gnocchi to the pan and heat everything up again. Then, cover and let the dish simmer for another 3-5 minutes at a time. Serve with Parmesan cheese, if desired.
