Pasta with chanterelle cheese sauce

Ingredients for 3 servings:

  • 500 g pasta (wholemeal)
  • 300 g milk
  • 2 cups whipped cream
  • 200 g chanterelles
  • 75 g flour for binding
  • 2 packs of Camembert(s)
  • 200 g Parmesan, grated
  • 150 g cheese (Emmental)
  • salt and pepper
  • possibly spice(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta and, in the meantime, heat the milk, flour, and cream in another pot. Crumble the cheese into the hot cream. Add the Parmesan and stir well. Season the sauce to taste. I only use pepper and salt. Drain the pasta and rinse. Keep the cheese sauce warm. Heat oil in a frying pan, add the washed chanterelles, and fry lightly (this takes about 3 minutes). Season the chanterelles. Mix the pasta, sauce, and chanterelles together. Heat again and serve as soon as possible. We like this dish best with plenty of Parmesan.
