Tagliatelle with chanterelle mushrooms and cream sauce

Ingredients for 4 servings:

  • 500 g pasta (e.g. tagliatelle)
  • 300 g chanterelles (or mushrooms)
  • 50 g bacon (e.g. belly bacon)
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 cup whipped cream, approx. 200 g
  • 2 cl brandy
  • 1 tbsp olive oil
  • 2 tbsp Parmesan, freshly grated
  • 2 tbsp chives, finely chopped
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Clean the chanterelles and chop them up a little, if necessary. Finely chop the onion and garlic. Fry them in oil in a pan, add the finely chopped bacon. Now add the chanterelles and fry them. Deglaze with brandy. Pour in the cream and let it reduce slightly. Season with salt and pepper. Add the cooked pasta. Sprinkle with Parmesan cheese and chives and serve immediately.
