Sweet and sour mustard eggs

Ingredients for 3 servings:

  • 5 eggs
  • 3 tbsp flour
  • 1 pack of ham cubes
  • 3 tbsp sugar
  • 2 tbsp mustard
  • 3 dashes lemon juice
  • 50 g butter
  • 1 liter of water
  • e.g. salt and pepper

Working time approx. 1 minute; Cooking/baking time approx. 15 minutes; Total time approx. 16 minutes

quick and easy

Boil the eggs for 8 minutes. Fry the ham cubes, then add the butter and let it melt. Carefully add the flour, preferably sifted, and stir to form a roux. Carefully pour in the warm water (I boil it in the kettle first). Stir well to create a creamy sauce. Bring to a boil briefly, then add the mustard, sugar, and lemon juice, and season with salt and pepper. When the eggs are done, rinse them in water and peel them. I really like it when the eggs still release their flavor into the sauce. That’s why I put all the eggs through the egg slicer and then add them to the sauce, then let everything simmer for another 10 minutes on low heat. This goes well with potatoes or mashed potatoes.
