Vegetarian, spicy pepper casserole

Ingredients for 4 servings:

  • 500 g mixed peppers
  • 2 large onions
  • 1 can of corn
  • 1 can kidney beans
  • 1 bag of ready-made mix for chili con carne
  • Cheese (grated Gouda)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the bell peppers and onions into bite-sized pieces. Sauté briefly, season with a little salt and cayenne pepper. Stir in the sauce packet according to the instructions. Add the corn and beans, and heat briefly. Transfer everything to a casserole dish, sprinkle with the Gouda cheese, and cook at 180°C for about 20 minutes (or 30 minutes if you don’t like your vegetables too crunchy). For a spicier twist, add chili peppers and garlic. Serve with rice or simply baguette.
