Avocado, goat cheese and pomegranate salad

Ingredients for 2 servings:

  • 40 g walnuts
  • 1 avocado(s), ripe
  • lemon juice
  • ½ onion(s), red
  • 1 pomegranate
  • 150 g mixed leaf salad
  • 1 tbsp olive oil
  • 60 g goat cheese
  • 8 basil leaves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Roast the walnuts in a dry, hot pan. Shake the pan constantly, as the nuts burn easily! Halve the avocado, scoop out the flesh, and cut into chunks or slices. Squeeze the lemon juice over the avocado. Peel the onion and slice into strips. Halve the pomegranate and remove the seeds. Tear the lettuce leaves into pieces. Combine the lettuce, avocado, and onion in a bowl and drizzle with olive oil. Sprinkle with chopped nuts, crumbled goat cheese, pomegranate seeds, and basil leaves.
