Matjes salad with mustard, apple, gherkin and onions

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 apple
  • 3 gherkins
  • 1 pack of matjes fillet(s) Nordic style, 265 g
  • 1 ½ tbsp sugar
  • 1 tsp salt
  • 1 bay leaf
  • 3 allspice berries
  • 3 juniper berries
  • 10 peppercorns, colored
  • 3 tbsp white wine vinegar
  • 2 tbsp rapeseed oil or other neutral oil
  • 1 tbsp mustard, medium hot

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Peel the onion and remove the core, stem, and blossom from the apple. Dice the onion, gherkins, apple, and herring into small cubes. Place everything in a bowl and add the remaining ingredients from the list. Stir well. Cover and refrigerate, stirring occasionally. The salad will keep for several days in the refrigerator and is perfect for a party buffet, with bread, potato dishes, etc. The bay leaf can be removed before serving.
