Herring salad New Year's morning

Ingredients for 4 servings:

  • 4 salted herring(s)
  • 2 gherkins, diced
  • 4 apples, diced
  • 1 large onion(s), finely diced
  • 3 carrots, cooked, sliced
  • 12 potatoes, boiled, diced
  • 1 cup of yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp mustard
  • Salt and pepper, white
  • Sugar
  • lemon juice

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Rinse the herring, gut it, and cut it into small pieces. Place it in a bowl with the diced vegetables. Mix the other ingredients together to make a dressing, season to taste, and mix everything well. Let it sit for a few hours. This is a traditional dish that my mother has been making on New Year’s Eve, and only on New Year’s Eve, for 40 years.
