Ingredients for 4 servings:

  • 400 g carrot(s)
  • 1 large onion(s)
  • 2 tbsp oil
  • salt and pepper
  • ¼ liter of water
  • 4 tbsp semolina (durum wheat)
  • 3 eggs, hard-boiled
  • 1 ball of mozzarella
  • 4 tbsp breadcrumbs
  • Breadcrumbs for rolling
  • Oil for frying

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Finely grate the carrots (using a food processor if necessary) and fry them in oil along with the finely diced onion. Season with salt and pepper, pour in the water, and let it reduce slightly. Stir in the semolina, remove from the heat, and let it cool. Finely chop the hard-boiled eggs and mozzarella and stir them into the cooled carrot mixture along with the breadcrumbs. Form this mixture into patties (12 pieces), roll them in breadcrumbs, and fry in oil. Serve immediately.
