Ingredients for 1 servings:
- 4 tomatoes, soft
- 1 small onion(s), diced
- 2 eggs
- Salt
- pepper
- little fat for frying
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Pour the fat into a pan and briefly fry the diced onion. Chop the tomatoes into small pieces (not too small!) and add them to the onion. Simmer everything until it’s not quite as runny. Season with salt and pepper. Beat the eggs and add them to the tomatoes. Let everything set for a moment. Note: You can also peel the tomatoes beforehand; I personally don’t mind the skin. I like to serve it with a sandwich. The name speaks for itself when you see it on your plate!
