Currywurst sauce with onions and plum jam

Ingredients for 4 servings:

  • 500 g tomatoes, pureed
  • 100 g ketchup
  • 200 g onion(s)
  • 1 tsp, ground curry powder, hot
  • 4 tsp, ground curry powder, mild
  • 1 tsp, leveled salt
  • 1 tsp, crushed paprika powder, sweet
  • 1 tsp mustard
  • 2 tbsp maple syrup
  • 3 tbsp plum jam
  • 1 tbsp soy sauce
  • 2 tbsp oil

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 20 minutes

Sauté the onions in a little oil until lightly browned. Then add all the ingredients and simmer for 10 minutes. If you like it spicier, add more curry powder accordingly. It’s best to prepare this the day before so the sauce can infuse. To serve, warm it and pour it over the chopped sausage. It also goes well with meat.
