For 2 glasses

Blend the buttermilk, apple juice, honey, and lime juice with a hand blender until frothy. Wash and core the apple, then cut into 8 small wedges. Thread each of the wedges into 4 pieces on a wooden skewer. Cut the remaining apple into large wedges and serve separately with the drink. Drizzle with lime juice to prevent them from browning. Pour the mixture into two attractive glasses and dust with cinnamon. Place the apple skewers in the glasses and garnish with lemon balm leaves. Serve with the apple wedges and serve immediately.
