Gnocchi salad with green beans and dried tomatoes

Ingredients for 6 servings:

  • 500 g gnocchi, ready-made product
  • 400 g beans, frozen – green beans
  • 1 jar tomato(s), dried, pickled in oil
  • 200 g mozzarella mini balls, drained
  • Balsamic vinegar, dark
  • Balsamic vinegar, light
  • Oil from the pickled tomatoes
  • olive oil
  • Salt
  • Pepper, from the mill
  • sugar or honey
  • Oregano, dried
  • Chili flakes, dried
  • Garlic, dried

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the gnocchi and green beans in salted water until al dente, then drain. Meanwhile, drain the sun-dried tomatoes (reserve some of the seasoning oil) and dice them. Then, prepare a spicy dressing from the listed ingredients and add the sun-dried tomatoes. While the gnocchi and beans are still warm, toss with the dressing and let cool slightly. Just before serving, carefully fold in the mozzarella balls. The salad tastes great served lukewarm, but also cold once it’s been thoroughly marinated.
