Ingredients for 1 servings:

  • 300 g raspberries
  • 300 g blackberries
  • 300 g currants, red currants
  • 300 g blueberries
  • Gelling sugar 2:1 (as needed according to the package, please weigh!)
  • 1 tsp citric acid (or lemon juice)
  • some rum (to rinse the lids)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rinse the jam jars with hot water and leave them upside down on a rack in the oven at 100°C to dry for about 10 minutes. In the meantime, sort the berries, place them in a large saucepan, and bring to a boil while stirring. Simmer the berry mixture for about 5-6 minutes, until the berries have released their juices and have softened. Then pass it through a food mill to remove any seeds. Weigh the pureed berry mixture and add the appropriate amount of gelling sugar in a 2:1 ratio. Mix well and return to the boil on the stovetop. Boil the jam according to the package instructions until it bubbles (about 4-6 minutes). Test for setting (put 1 teaspoon of jam on a small plate) and fill the sterilized jars, ensuring the lids are clean. Rinse the lids with rum before sealing and screw on tightly. Place on the lid and let it cool for 10 minutes (this creates a vacuum), then turn it over and let it cool completely.
