Ingredients for 4 servings:

  • 6 sheets of white gelatin
  • 1 mango(s)
  • 250 ml sparkling wine
  • 2 tsp lemon juice
  • 75 g sugar
  • 250 g whipped cream

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Soak the gelatin leaves in cold water for about 5 minutes. Then squeeze out the excess water and dissolve it in a small saucepan while still dripping wet. Peel and core the mango. Finely chop the flesh, then puree it and mix with sparkling wine, lemon juice, and sugar. Stir in the lukewarm gelatin solution and let it cool. Whip the cream until stiff and fold it into the mixture. Spoon the cream into bowls, cover with cling film, and refrigerate to set.
