Mashed potato, mozzarella and zucchini casserole

Ingredients for 1 servings:

  • 1 m.-large zucchini
  • some olive oil
  • 200 g mashed potatoes
  • 100 ml sauce, Bolognese
  • 1 pack of mozzarella, 45% fat
  • e.g. salt and pepper
  • oregano
  • Spice mix (pizza seasoning)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Grease a baking dish with olive oil and sprinkle with salt, pepper, and pizza seasoning. Set the dish aside. Wash the zucchini, trim the ends, and slice thinly with a vegetable peeler. Line the baking dish with zucchini slices, but don’t use all of them. Layer the mashed potatoes, mozzarella cubes, Bolognese, and the remaining zucchini slices, as desired, and season to taste. Place on a baking sheet in a preheated oven at approximately 180°C (fan oven) and bake until the top is golden brown. Tip: Add ham or something similar, if desired.
