Ingredients for 4 servings:

  • 4 trout(s), ready to cook
  • 4 slices of bacon
  • oil
  • Parsley
  • dill
  • chives
  • herb butter
  • lemon juice
  • salt and pepper
  • possibly rosemary

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Marinade: Mix the oil with the herbs, salt, pepper, and lemon juice. Clean, salt, and pepper the fish. Place one slice of bacon and one piece of herb butter into the belly of each fish before tying them tightly with kitchen string. The herb butter can also be rubbed into the belly to allow its aroma to penetrate even more during the marinade. Place the fish in the marinade for two days and then grill in aluminum foil (or cook in the oven). If you like, you can also add one or two sprigs of rosemary to the belly. This very simple dish tastes great with herb baguette or salad, or even with fried or boiled potatoes.
