Fried potatoes with walnuts and cherry tomatoes

Ingredients for 4 servings:

  • 1 kg jacket potatoes
  • 50 g walnuts
  • 2 tbsp butter
  • 300 g cherry tomatoes
  • 2 spring onions
  • 6 sprigs of thyme
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Boil the potatoes, peel them, and slice them. Halve the tomatoes, slice the spring onions, and wash the thyme. Roughly chop the walnuts and roast them in a dry pan. Don’t overcook them, or they can become bitter. Then remove them from the pan. Heat the butter and fry the potatoes for about 10 minutes. Add the tomatoes, spring onions, and thyme to the potatoes and fry everything together for about three more minutes. Season with salt and pepper and sprinkle with the walnuts.
