Pasta with spicy carrots

Ingredients for 1 servings:

  • 120 g pasta, short
  • 3 carrots, sliced
  • 1 tsp olive oil
  • 2 spring onions
  • 3 tbsp balsamic vinegar, white
  • 2 tbsp cream cheese
  • chili
  • e.g. Parmesan
  • n. B. Pine nuts, roasted
  • lots of water (salt water)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

WW – suitable

Prepare the pasta as usual in plenty of salted water. Sauté the carrots (I always pre-cook them until al dente) in 1 teaspoon of olive oil in a pan, then add the spring onions. Season with chili, salt, and pepper, and deglaze with white balsamic vinegar. Reduce the sauce and refill with pasta water. Then add the cream cheese. Add the cooked pasta to the pan, toss to coat, and serve sprinkled with Parmesan and pine nuts, if desired.
