Turkey fillet in cheese puff pastry

Ingredients for 2 servings:

  • 2 pieces of turkey meat, fillet 200 g each
  • 20 g clarified butter, as needed
  • 2 spring onions
  • 1 pack of puff pastry, fresh from the refrigerated section
  • 200 g cheese, white cow cheese, formerly goat cheese in brine
  • 4 tbsp sweet cream
  • 2 bell peppers, roasted, sweet and sour ad jar or fresh (1 pc.)
  • 2 tbsp thyme, fresh leaves, or 1 tbsp dried
  • 1 egg yolk
  • Salt and pepper, as needed

Season the turkey fillets with salt and pepper and fry in clarified butter. Finely slice the spring onions, remove the bell peppers from the jar, drain, and also dice them. Add both to the pan and fry briefly. Finely crush the white cheese and mix with 3 tablespoons of sweet cream. Add the thyme, spring onions, and bell peppers from the pan, and spread the mixture on the rolled-out puff pastry. Then place the turkey fillets on top and roll the puff pastry with the cheese mixture, pressing firmly on the sides, leaving a 1-2 cm border. Place the whole thing on a baking sheet lined with baking paper and then brush with the mixture mixed with the egg yolk and 1 tablespoon of sweet cream. Bake in a preheated oven at 180°C for about 30 minutes until golden brown. Turn off the oven and let it rest for 15 minutes. Slice and serve with vegetables, such as green beans with bell peppers (described in my profile, in DB). This dish can be eaten and served hot or cold.
