Andreas Kohlrabi and Carrot Salad

Ingredients for 2 servings:

  • 200 g carrot(s)
  • 1 small kohlrabi
  • 3 tsp sugar
  • 1 pinch of salt
  • pepper
  • ½ bunch parsley
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • possibly mayonnaise

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Peel the carrots and kohlrabi and grate them very finely. Wash the parsley, pat dry, and chop. Mix all ingredients together and season to taste. Let stand for at least 1 hour.
