Spaghetti muffins with Grana Padano

Ingredients for 12 servings:

  • 250g spaghetti
  • 3 egg yolks
  • 50 g diced ham (fine ham cubes)
  • 200 ml whipped cream
  • 1 onion(s)
  • 120 g Grana Padano, aged for 16 months
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Carbonara

Preheat oven to 180°C (top/bottom heat), 160°C (fan oven). Grease a muffin tin with butter. Cook pasta in salted water until al dente. Drain pasta and, using a fork and spoon, form small nests. Carefully place the nests into the muffin tin. Finely dice the onion. Brown ham cubes in a pan, add shallots, and sauté. Grate 100g of Grana Padano and mix with the egg yolk and cream. Stir in the onion and bacon mixture and season with salt and pepper. Spread the egg mixture evenly among the nests using a spoon. Grate some more Grana Padano over the muffins, if desired. Bake in the oven for about 25 minutes.
