Garlic bacon hash browns

Ingredients for 2 servings:

  • 1 tbsp rapeseed oil
  • 1 tsp butter
  • 1 m.-large onion(s), yellow
  • 150 g bacon, (garlic)
  • 450 g potatoes, waxy, cooked
  • 120 g corn, small can
  • 1 small bunch of parsley
  • Salt
  • pepper
  • Caraway, whole or ground
  • 4 small peppers or pepperoni, red and green
  • chives

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Heat the butter and oil in a frying pan and lightly brown the finely chopped onion. Cut the bacon into thin, short strips, add it, and fry thoroughly. Cut the previously cooked potatoes into coarse slices, add them, and fry until slightly crispy. Drain the sweetcorn and mix in. Then fold in the chopped parsley and season everything with salt and pepper, and caraway seeds to taste. Serve the dish on warmed plates, garnish with small chili peppers, and sprinkle with chives. This dish goes particularly well with green leaf salad, coleslaw, or a slice of dark farmhouse bread. The garlic bacon can also be replaced with streaky roast bacon.
