Ingredients for 1 servings:

  • 4 tbsp olive oil
  • 1 tbsp vinegar (white wine vinegar)
  • 1 tbsp white wine
  • 3 tbsp mustard
  • 2 shallots
  • 2 eggs
  • 1 tbsp chives or parsley
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dressing for leaf salads, endive or Chinese cabbage

Hard-boil the eggs. Meanwhile, combine the white wine vinegar, white wine, mustard, a pinch of salt, pepper, and sugar. Slowly add the olive oil while stirring constantly. Finely chop the parsley and shallots and add them to the sauce. Dice the hard-boiled eggs and add them. Season with salt and pepper. The sauce goes well as a dressing for leaf salads, endive, or Chinese cabbage.
