Ingredients for 1 servings:
- 2 tbsp vinegar (white wine vinegar)
- 2 egg yolks
- 6 tbsp oil
- 2 tbsp tomato paste
- 6 tbsp crème fraîche
- 2 tbsp parsley, chopped
- 1 tbsp cognac
- salt and pepper

Made in a flash – also suitable as a dip
Mix the white wine vinegar with a pinch of salt. Add the egg yolk and beat vigorously (I use a food processor, but a whisk works too). Then slowly add the oil, continuing to beat vigorously. Now add the crème fraîche and tomato paste and mix. Finally, season to taste with salt, pepper, parsley, and the cognac.
