Lime yogurt dressing

Ingredients for 4 servings:

  • 2 shots of lime juice
  • 1 tsp mustard, medium hot
  • 1 dash of olive oil, plenty
  • 5 tbsp, heaped natural yogurt, 1.5%
  • 1 tsp, heaped sea salt
  • 1 tsp, levelled black pepper, freshly ground, coarse
  • 1 ½ tbsp honey
  • 1 tsp basil, shredded or 4 fresh leaves, chopped

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

with mustard, vegetarian

Simply add everything to a blender and blend thoroughly. Season to taste; depending on the acidity of the limes, you may need to add more honey. This makes enough for a whole head of lettuce. It’s a great refreshing summer salad, and also pairs well with grilled food. I like to use iceberg lettuce with bell peppers, cherry tomatoes, and cucumber.
