Ingredients for 1 servings:

- 2 egg yolks
- 300 ml rapeseed oil or sunflower oil
- 1 tsp, heaped Dijon mustard
- 5 tbsp lime juice
- 1 tbsp lime zest
- 1 jalapeño(s)
- 1 tbsp white cane sugar
- salt and pepper

Goes perfectly with burgers with steakhouse or sweet potato fries
Place the egg, egg yolk, Dijon mustard, lime juice, and oil in a tall bowl. Blend with an immersion blender and slowly pull upwards until the remaining oil is incorporated. Once all the oil is blended, the mayonnaise should have a good consistency. Add the deseeded and finely chopped jalapeño pepper, lime zest, and sugar, and season with a little salt and pepper. Blend briefly again.
