Ingredients for 10 servings:

  • 1,250 ml water
  • 170 g salt
  • 4 ½ g lecite

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

In a tall container with a diameter of approximately 25 cm, thoroughly mix the ingredients with a hand blender. Move the hand blender around the top of the liquid to incorporate as much air as possible. This creates a foam on the surface, which is called air because of its texture. Remove the foam with a large spoon. Very decorative, but also extremely salty—so use it sparingly!
