Fried wheat noodles with shrimp and basil pesto

Ingredients for 4 servings:

  • 350 g pasta
  • 2 small pieces of ginger, optional
  • 2 garlic cloves
  • 2 onions, preferably red
  • 50 g cashew nuts
  • 4 tbsp olive oil
  • 300 g shrimp(s), fresh
  • Salt, iodized
  • pepper
  • 8 tbsp sesame oil
  • 200 g basil pesto
  • basil leaves

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

iodine-rich and delicious

Cook the noodles in water with a little iodized table salt according to the package instructions. Meanwhile, finely chop the garlic, ginger, cashews, and onions. Season the shrimp with iodized table salt and pepper and fry in a pan with the oil until cooked through. Remove the shrimp and, in the same pan, fry our mixture of garlic, ginger, onions, and cashews in olive oil until crispy. Add the noodles to the pan, mix well, and season with a little sesame oil, if desired. Add the fried shrimp and basil pesto and season to taste. Garnish with fresh basil.
