Creamy quark with currants

Ingredients for 2 servings:

  • 250 g low-fat curd cheese
  • 1 shot of carbonated mineral water
  • Sugar to taste
  • 1 tbsp crème fraîche
  • 50 g currants, red
  • some lemon juice

quick, easy dessert for everyday cooking

Wash the currants, drain them, and remove the stems. Beat the quark with sugar, crème fraîche, a little mineral water, and lemon juice with a hand mixer for a few minutes until very creamy; it should have the consistency of heavy cream. Now fold in the currants and serve. The quark should be served soon to maintain its creaminess. If you want to save calories, you can omit the crème fraîche; the mineral water will still make the quark very creamy.
