Sunflower butter

Ingredients for 1 servings:

  • 300 g sunflower seeds, peeled
  • 50 g oil, neutral (e.g. coconut oil, sunflower oil, etc.)
  • 2 tsp honey
  • ½ tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Equivalent to peanut butter

First, roast the sunflower seeds in a large pan, stirring occasionally, taking care not to overcook them and make them bitter. Then let them cool. Finely grind them using a blender or hand blender. Next, add the oil, salt, and honey and blend or puree everything thoroughly again. If the mixture is still too dry or crumbly, simply add a little more oil. Season to taste and add more salt or honey if desired. A great alternative to peanut butter, whether as a spread, a sauce base (satay sauce, peanut sauce), or for baked goods and desserts. It will keep in the refrigerator for a few weeks, but will then firm up a bit.
