Plum pancakes from the tray

Ingredients for 4 servings:

  • 100 g flour
  • 250 ml milk
  • 2 tbsp sugar
  • Salt
  • 3 eggs, separated
  • 300 g plums, pitted and quartered
  • 3 tbsp cinnamon sugar
  • 1 package of ice cream (vanilla ice cream)
  • Butter, for the baking tray

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 225°C (425°F). Whisk the flour and milk until smooth, then stir in a pinch of salt, 1 tablespoon of sugar, and the 3 egg yolks. Whisk the 3 egg whites with a pinch of salt and 1 tablespoon of sugar until stiff peaks form. Remove the hot baking sheet from the oven, grease it, pour the batter onto it, and smooth it out. Arrange the plums on the batter. Place the beaten egg whites onto the batter with a tablespoon and sprinkle with cinnamon sugar. Place the pancake on the middle shelf of the oven and bake for 12-15 minutes. Roll up the hot pancake, cut into slices, and serve with vanilla ice cream.
