Ingredients for 4 servings:

  • some butter for the mold
  • 450 g blackberries
  • 75 g sugar
  • 2 tbsp sugar for sprinkling
  • 1 egg(s)
  • 75 g brown sugar
  • 6 tbsp butter, melted
  • 8 tbsp milk
  • 125 g flour
  • ¼ tsp baking powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 180°C and grease a baking dish with butter. Gently combine the blackberries and caster sugar in a large bowl. Then transfer the fruit to the prepared dish. Whisk the egg with the brown sugar. Stir in the butter and milk, sift in the flour and baking powder, and mix everything into a smooth batter. Pour the batter over the sugared berries, ensuring they are completely covered. Place the casserole in the oven and bake for 25-30 minutes until golden brown. Sprinkle with 2 tablespoons of sugar and serve while still hot.
