Ingredients for 6 servings:

  • 1 mango(s), ripe
  • 2 limes
  • 1 bottle of sparkling wine, dry
  • Lemon balm, the leaves of which

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

To decorate, cut a slice of mango from each glass, including the skin, and set aside. Peel the remaining mango. Cut the flesh along the stone and roughly dice it. Puree with a hand blender. Press the puree through a fine sieve and chill. Cut half of the limes into as many slices as there are glasses. Score each slice once from the edge to the middle. Use the slit to later place the lime slices over the rims of the glasses. Squeeze the remaining limes. Mix the mango pulp with the lime juice (to taste, use 3-4 tbsp for 6 glasses) and divide between the glasses. Pour on the chilled sparkling wine. Stir once to ensure the pulp is evenly distributed. To decorate, place mango wedges, lime slices, and lemon balm around the rims of the glasses.
