Leaf salad with honey-balsamic dressing and citrus flavor

Ingredients for 1 servings:

  • 80 ml vegetable stock
  • 4 tsp pumpkin seed oil
  • 4 tsp mustard, hot
  • 4 tsp honey, mild
  • 40 ml balsamic vinegar, white
  • ½ tsp orange peel, untreated
  • ½ tsp lemon zest, untreated
  • salt and pepper
  • 1 cup herbs (arugula, parsley, chives)
  • 300 g lamb’s lettuce and/or spinach
  • e.g. iceberg lettuce

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Prepare a dressing from the first 8 ingredients. Sort the remaining ingredients, wash them, chop them finely if necessary, and place them in a bowl. Dress the salad with the dressing. The amounts for lemon and orange zest refer to fresh or finely chopped zest. When using ready-made products, the amounts may vary! Please measure carefully and taste as you go! If you like arugula, you can also use this dressing for an arugula salad instead of just using it as a seasoning. If arugula isn’t available, use garden cress or another strong cress-like herb.
