Spring cream cheese as a dip or spread

Ingredients for 1 servings:

  • 200 g crème fraîche
  • 100 g mascarpone
  • 2 tbsp cream
  • 1 garlic clove(s), fresh
  • 1 dashes lemon juice
  • Salt and pepper, white, freshly ground
  • 6 large radishes
  • 2 large spring onions
  • ½ box of cress

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and dry the radishes and spring onions. Peel and press the garlic, sprinkle with salt, and mince with the back of a knife. Whisk the crème fraîche, mascarpone, cream, lemon juice, and crushed garlic until smooth and season with salt and pepper. Coarsely grate the radishes, thinly slice the spring onions, and trim the cress. Set aside a small portion of each. Stir the grated radish, spring onion rings, and cress into the cheese mixture. Transfer the cream cheese mixture to a serving bowl and sprinkle with the reserved radish shavings, spring onion rings, and cress. The spring cream cheese can be served immediately, but tastes even better if it’s left to stand for a few hours. The spread will keep, covered, in the refrigerator for 3-4 days and is delicious as a dip or spread on bread.
