Indian barbecue marinade

Ingredients for 2 servings:

  • 30 ml tomato paste
  • 40 ml natural yogurt
  • 50 ml soy sauce
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 1 tsp, grated ginger
  • 1 tbsp jam
  • ½ lemon(s)
  • 1 tbsp cumin
  • ¼ tsp fenugreek
  • ½ tsp coriander powder
  • ½ tsp cardamom powder
  • ½ tsp sweet paprika powder
  • chili flakes
  • Lemongrass

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 5 minutes; Total time approx. 12 hours 15 minutes

for meat and vegetables

Peel and finely chop the onion, garlic, and ginger. Briefly roast the cumin, fenugreek, coriander, and cardamom in a very hot pan without fat, but be careful not to burn them. Mix together the tomato paste, yogurt, and soy sauce. Squeeze the lemon and add the juice to the sauce. Now add all the other ingredients and mix well. This marinade is suitable for approximately 300g of meat. It can also be used to marinate vegetables such as peppers, zucchini, eggplant, or mushrooms. It’s best to let the marinated food sit in the refrigerator for 12 hours.
