Ingredients for 1 servings:

  • 1 tsp pepper, green, fermented
  • 1 slice(s) salted lemon(s)
  • ½ bunch flat-leaf parsley
  • 8 tbsp olive oil

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

Finely grind the fermented green peppercorns and salted lemon in a mortar and pestle. Finely chop the parsley. Mix everything together with the olive oil and let it sit for about 2 hours. This seasoning oil pairs well with cooked fish, baked vegetables, beetroot carpaccio, or steaks. Do not fry the oil during cooking; drizzle it over the dish at the end.
