Ingredients for 4 servings:
- 250 g couscous
- 250 g minced meat
- 250 g feta cheese
- 300 g cherry tomatoes
- 1 bell pepper(s)
- 1 stalk of leek
- olive oil
- Balsamic vinegar
- salt and pepper
- basil
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes
Dice or chop the tomatoes, bell peppers, and feta cheese and place them in a large bowl. Add olive oil and balsamic vinegar, season with pepper, salt, and plenty of basil. Cover and refrigerate for 30-60 minutes. Prepare the couscous according to the package instructions and let it cool. Brown the minced meat in a pan. Slice the leek into rings, add it, and season with pepper and salt. Add it to the vegetable and cheese mixture and stir in the couscous. Serve with fresh bread and herb curd cheese. Tip: You can also add olives, zucchini, etc.
