Ingredients for 4 servings:
- 8 beefsteak tomatoes, ripe
- 1 package of feta cheese or soft sheep cheese from a Turkish grocery store
- 1 bunch of parsley
- 2 garlic cloves
- Thyme
- ½ lemon(s), ripe
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the “lid” off the beefsteak tomatoes and scoop out the insides with a spoon. Place the insides of 3 tomatoes in a bowl. Finely chop the feta cheese, garlic, and parsley and add them to the bowl. Mix with a fork and mash lightly until a soft paste forms. Squeeze the lemon and season the mixture with lemon juice, thyme, salt, and pepper. Fill the tomatoes, place the lids on top, and wrap in aluminum foil so that the foil seals over the top of the tomato. Then place it on the hot grill for 15-20 minutes. When the cheese inside has melted, the tomatoes are ready. Be careful, though, as the tomatoes are very hot when they come off the grill, so let them cool for a few minutes. This also works well with goat’s cheese, but you should use much smaller tomatoes, otherwise it will be a bit expensive.
