Ingredients for 3 servings:
- 2 small zucchini
- 1 large bell pepper(s), red
- 1 pack of cheese suitable for grilling (alternatively feta or sheep cheese)
- olive oil
- salt and pepper
- lemon juice
- Herbs of Provence
Instructions

delicious vegetarian variation for grilling & antipasti
Prepare a marinade with olive oil, lemon juice, salt, pepper, and the herbs. Wash and slice the zucchini, then marinate (at least 1/2 to 1 hour). Wash and slice the bell peppers. Brush the grilled cheese with olive oil and cut into cubes. Alternate the zucchini, bell peppers, and cheese on skewers, drizzle with the remaining marinade, and grill (or use a grill pan) (alternatively, in the oven or in a pan). Delicious as a vegetarian vegetable grill variation, with baked potatoes and (my) garlic sauce!
