Brussels Sprouts Kimchi

- 2 kg Brussels sprouts
- 20 g Salt
- 1 piece Clove of garlic
- 2 tbsp Mango puree
- 1 Chilli pepper
- It is a harmonious, withdrawn kimchi, which cannot be subordinated to other components due to excess garlic and spiciness, but rather balance and mildness. Indian mango powder can also be used, the spiciness can be increased by adding more garlic and chilli.
- Clean and defoliate the Brussels sprouts. Salt and knead until juice is produced. Fold in the mango puree and finely grated garlic clove. Stuff everything into a glass / clay vessel, possibly using a tamper to help.
- Let stand for a week in a warm place at approx. 23 ° C. Then let it mature in the refrigerator until ready to be eaten.
