Mustard Sauce
The perfect mustard sauce recipe with a picture and simple step-by-step instructions.
- 40 g Butter
- 40 g Flour
- 0,5 liter Hot meat broth from cubes
- Salt and white pepper
- 1 tsp Lemon juice
- 2 Egg yolk
- 0,125 liter Cream
- 50 g Mustard medium hot
- 1 pinch Sugar
- Heat the butter in a saucepan, sweat the flour in it for about 3 minutes at not too high a heat. Gradually stir in the meat stock. Let the sauce simmer for about 5 minutes. Season with salt and pepper (sparingly, the broth is already seasoned) and remove from the stove.
- Whisk lemon juice, egg yolk, cream and mustard in a bowl and mix with a little sauce so that the ingredients can bond. Stir slowly into the sauce, now season again with sugar and, if necessary, salt.
