Pasta salad with Parma ham and green pesto

Ingredients for 6 servings:

  • 500g penne
  • Water (salt water)
  • 4 balls of mozzarella
  • 750 g cocktail tomatoes
  • 150 g Parma ham
  • 8 tbsp balsamic vinegar, white
  • 4 tbsp apple juice
  • 1 jar pesto, green
  • 8 tbsp olive oil
  • Salt and pepper, black

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta in salted water until al dente, rinse in cold water, and drain well. Halve or quarter the cherry tomatoes (depending on their size). Cut the mozzarella into small pieces. Combine the balsamic vinegar, apple juice, pesto, and olive oil in a large salad bowl to make a salad dressing. Season with salt and pepper. Add the pasta, tomatoes, and mozzarella and stir in. Before serving, tear the Parma ham into small pieces and scatter it loosely over the pasta salad.
