Cauliflower and honeydew melon raw vegetable salad

Ingredients for 4 servings:

  • ½ head of cauliflower
  • 1 cup of tzatziki
  • 1 cup of natural yogurt
  • ¼ honeydew melon(s)
  • dashes lemon juice
  • Salt and pepper, ground
  • some pine nuts or sunflower seeds

Working time approx. 15 minutes; Total time approx. 15 minutes

Grate the cauliflower in the food processor and squeeze on some lemon juice. Chop the 1/4 honeydew melon, peeled and deseeded, in the food processor. It’s okay if a few large pieces remain. Add the tzatziki and yogurt. Season with salt and pepper. If you like, you can add roasted nuts, sunflower seeds, or pine nuts. Mix the finished sauce with the cauliflower. Adjust seasoning if desired and let it sit for a while. This recipe can also be adapted with other fruit, such as ripe pears.
