Ingredients for 4 servings:
- 250 g barley (tsampa), finely ground, roasted
- 1 tbsp butter
- 1 tsp cocoa powder
- 1 tsp desiccated coconut
- 1 handful of raisins, finely chopped, other dried fruit is also possible as desired
- 1 cup milk, also coconut, rice or oat milk
- 1 tsp cane sugar
- 1 tsp coconut syrup, or other fruit syrup
- 1 pinch of cinnamon
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
In a bowl, roughly mix all ingredients—except the milk and desiccated coconut. Gradually add the milk and knead into a dough. The dough should be firm enough to form small balls. If it’s too soft, add a little more tsampa; if it’s too firm, add a little more milk. Place the desiccated coconut on a plate and roll the balls in it until they’re completely covered. The balls can be eaten immediately. Leftovers will keep in the refrigerator for about a week.
