Simple Metaxa sauce

Ingredients for 4 servings:

  • 8 cl Metaxa
  • 3 garlic cloves
  • 1 tbsp olive oil
  • 4 tbsp tomato paste
  • 1 cup crème fraîche
  • 150 ml milk
  • 1 tsp gyro seasoning
  • oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Finely chop the garlic cloves and sauté them in a pan with the oil. Then add the tomato paste and fry gently. Once both are lightly toasted, deglaze with the Metaxa. Then add about 3/4 of the milk and stir in the crème fraîche. Then add the gyro seasoning and let everything simmer gently. Gradually add the rest of the milk and continue simmering until the desired consistency is reached. Finally, garnish with a little oregano, season to taste, and serve.
