Sweet and spicy salad dressing à la Flores

Ingredients for 1 servings:

  • 4 cl balsamic vinegar, light or dark
  • 3 cl olive oil, good
  • ½ tsp, heaped tomato paste
  • ½ tsp mustard (sweeter for dark vinegar, medium hot for light) or mustard flour
  • some basil
  • ½ onion(s)
  • salt and pepper
  • some parsley, fresh
  • some chives, fresh
  • some marjoram, tarragon and/or hyssop
  • ½ tsp horseradish (not creamed horseradish!) optional

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

My favorite basic salad dressing recipe since childhood

Combine all ingredients except the fresh herbs and onion in a bowl and mix, then season with salt and pepper to taste. If it’s too strong, dilute with a little water or simply drain the salad less thoroughly. Finely slice half the onion and toss with the dressing. Fold in the lettuce, divide into bowls or plates, finely chop the herbs, and scatter over the salad. I like to garnish with edible flowers if the garden has them. It’s good for all leaf salads, wild herbs (dandelions, ground elder, chickweed, etc.), and mixed salads with cucumbers (I like to add dill and always use sweet mustard) and tomatoes. This recipe makes 6 servings.
